Easy Low-Carb Dinner Recipes

Chicken Marsala

Serves: 4

Prep Time: 10 -15 minutes

Cook Time: 15-20 minutes

Ingredients:

4 Chicken half breasts, boneless and skinless

1 cup fresh mushrooms, sliced

1/2 cup dry marsala wine

4 tbsp. oil

4 tbsp. butter

3 tbsp. sour cream or to taste for the sauce

1/2 tsp. oregano

1/2 tsp. salt

1/2 tsp. pepper

.25 oz parmesan, grated

16 oz bag of Pork rinds

Directions:

1. Pound the chicken breasts gently between plastic wrap, making them evenly flat.

2. Blend oregano, salt, pepper, parmesan, and pork rinds well. This should come out like the texture of breadcrumbs. The pork rinds are substitutes for flour, and this will be the coating on the chicken. Set Aside.

3. In a skillet, heat the butter and oil over medium high heat.

4. Pour pork rind mixture into a plastic bag and coat the chicken breasts with it. Shake off any excess.

5. Cook the chicken for about 2 minutes on medium heat, until lightly brown. Add the mushrooms when you turn the chicken.

6. Stir the mushrooms while you cook the chicken for about 2 more minutes on this side, or until lightly browned. When this side has lightly browned, add the wine and cover the pan to simmer on low heat for around 10 minutes.

7. Remove chicken from the skillet and let sit for a couple minutes before serving.

8. Now, whisk the sour cream into the skillet and heat the mixture until bubbly. This will give you a more creamy sauce. You can also let the sauce reduce a little bit before adding the sour cream.

9. Serve and pour sauce over the chicken and it’s done!
